Schu's Awesome Pumpkin Pecan Oatmeal Cookies
1/2 cup butter, softened
1/2 cup pumpkin
2/3 cup brown sugar, packed
1/3 cup white sugar
1 teaspoon ground cinnamon
2 large eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups whole wheat flour
3 cups oats (old-fasioned or quick)
12 ounces semisweet chocolate chunks, chopped
1 cup pecans, chopped
Heat oven to 350 degrees, prepare baking sheets (I like using a silicon mat).
In a large bowl use a mixer to combine the first nine ingredients (through salt) until well blended.
Beat in flour slowly, just until blended.
Stir in oats, chocolate and pecans.
Drop rounded tablespoons 1 inch apart onto baking sheets.
Bake 10-12 minutes, until golden brown.
